A simple way to modulate how sugar crosses the intestinal barrier is to make sure it is enrobed in fiber. Fiber is why an apple or orange, which has the same amount of sugar as a candy bar does not cause a "sugar rush" followed by a "sugar letdown"; the sugar crosses the intestinal barrier much more slowly. The fiber slows the sugar release and helps move it farther along the intestinal tract. This causes a slower absorption and consequently a more moderate insulin release by the pancreas.
