Some people have an unfortunate, probably hereditary, tendency to overproduce insulin. It seems that if they just "look at sugar," their pancreas squirts out insulin and they become hypoglycemic. Worse yet, when these people are older, they often develop a type of diabetes called adult onset or Type 2 diabetes.
Characteristically, they are often overweight, even obese, because they snack so often. These people have a tendency to be overweight because they eat the normal three meals and snack regularly as well. They also tend to eat highly sugared foods because these provide the quickest relief from the anxiety that low blood sugar produces.
A simple take-control strategy is to stop eating large meals and switch to a type of eating called "grazing." "Grazers" eat lots of small meals; in fact, they eat all day long and use sensible fiber supplements. They follow the same diet as people with normal insulin production; however, they simply have smaller portions and try to eat more often.
Although a hypoglycemic should be very cautious with cheese because it has lots of fat calories, it makes an excellent snack. As a rule, if you eat an ounce of cheese, you should take a tablespoon of a fiber supplement in a full glass of water at the same time.
