Have you ever noticed that if you eat a couple of eggs for breakfast, you'll feel satisfied all morning, especially if you have toast and juice with the eggs? There is a reason for this, which can be used to your advantage.
Eggs are an excellent source of protein, and with the toast and juice, the protein from the eggs is combined with the carbohydrates and even some sugar. The body uses carbohydrates for energy first; then, when that is used up, say, well into the morning, some of the amino acids are used for energy, albeit more slowly, and even the fat that is found in the egg yolk.
So, the protein actually provides a secondary source of energy which doesn't call for any insulin production. This energy can be correctly called "stamina" because it comes on later and keeps a person going.
Now, don’t run out and eat two eggs every morning. If you eat a good high-fiber cereal breakfast with milk. or better, a soy beverage, you'll be getting some protein that helps keep you going. This also explains why, when your blood sugar drops. an apple and a piece of cheese is a good pick-me-up. The apple acts quickly and the cheese keeps you going.
