Beta-Carotene

A smoker should eat at least two medium-size carrots daily, or about six to eight of those small, packaged carrots, which are excellent snacks. Alternatives or possible additions are half a melon or a serving of broccoli, cauliflower, brussels sprouts, or other deeply colored vegetables. Beta-carotene is a major defensive nutrient and also helps skin tone and color.

Many studies of smokers indicate that increased blood levels of beta- carotene from such natural sources have a protective effect against cancer in smokers. Beta-carotene also protects against other stresses associated with smoking. (Beta-carotene taken as a supplement does not have the same protective effects.)
